Chicken & Quinoa Soup

Warm and comforting like a traditional chicken soup but with the addition of protein-rich quinoa, also known for its antioxidant properties. A truly nourishing meal, providing an array of key nutrients such as amino acids, minerals, healthy fats, protein and complex carbohydrates to support any stage of motherhood.

INGREDIENTS

  • 1 tbsp ghee

  • 1 brown onion, finely diced

  • 4 cloves garlic, crushed

  • 2 stems of celery, finely diced

  • 2 carrots, finely diced

  • 1” piece of grated ginger

  • 1 bay leaf

  • 1 cup of tri-coloured quinoa (ideally soaked and soured overnight)

  • 4 cups of chicken stock or bone broth

  • 2 cups of shredded roast chicken, pasture-raised

  • 1 tsp organic ground tumeric (optional)

  • Black pepper to taste

  • A generous pinch of sea salt

  • Fresh parsley, finely chopped

METHOD

  1. Add the ghee to a heavy-based saucepan over medium heat.

  2. Saute the onion, garlic, celery, carrots, ginger and bay leaf until softened, along with the tumeric (if using).

  3. Add the quinoa, chicken broth or stock and bring to a gentle simmer until the quinoa is cooked.

  4. Add the shredded chicken and warm it through.

  5. Season to taste with sea salt and pepper.

  6. Serve and top with freshly chopped parsley.
